This lot comes from Aprocassi, a Fair Trade Organic certified cooperative with 600 active members spread across the San Ignacio and Jaén provinces of Cajamarca, Peru. Member farms span a remarkable altitude range — 1,000 to 2,500 meters above sea level — with coffee grown under shade and processed as naturals, sun-dried in the cooperative's traditional style.

Beyond the cup, Aprocassi invests deeply in its community and environment. Through Apromiel, a partnership with the NGO Rikolto, women coffee growers receive training and beekeeping modules that diversify farm income and strengthen household resilience.

The cooperative is also piloting Huella Ambiental, a 51-family study analyzing the full life cycle of coffee production from farm to port, with the goal of reducing emissions and moving toward carbon neutrality. The result is a coffee that delivers on both flavor and the values behind it.
